Freshly roasted coffee has a shelf life and should be treated with the same care as baked goods or fresh produce. For the best flavor, coffee needs a minimum of 12-24 hours rest after roasting before it is brewed. You can drink it before then but the body and flavor really won't be as developed. Don't wait too long to drink it though. Depending on the coffee, the vibrant flavours will begin to diminish after about a week. Coffee stored beyond a week will still taste good, but not as amazing as it did a few days out of the roaster. 
Light and Medium Roasts are king when it comes to coffee. The mark of an overly roasted coffee is when the surface of the bean is oily to the touch. This means that many of the flavor-containing compounds within the bean have been pushed to the surface during the roast process and immediately dull the natural and complex flavour potential of the bean itself.

Generally, dark roasted coffees are simply poor-quality commodity coffees that are roasted to a crisp to hide their underwhelming quality. So, you can almost always expect light or medium roasts. 

This coffee is for people who want something far beyond a hit of caffeine, and don't want to pay an arm and a leg for overpriced speciality coffee.
